You’re licking your lips over some Wheat Belly Pancakes. Easy to make, tasty, with none of the health problems incurred by their grain-based counterparts. But what to put on top of them? Here are some ideas:
Berries–either as is or with whipped cream. You can also puree them in your food chopper/processor to pour on top.
Berry syrup–Puree the berries, then sweeten with a safe sweetener such as pure liquid or powdered stevia, monkfruit, erythritol, or xylitol. (Wheat-Free Market’s sweetener, Virtue, is another good choice that is 4-times sweeter than sugar, allowing a little to go a long way.)
Butter–Some people just enjoy the flavor of butter on their pancakes, especially flavored pancakes like the Chocolate Chip Pancakes pictured above, or blueberry pancakes. Choose organic, whenever possible. Ironically, butter (and thereby ghee) are among the least problematic of dairy products, since they primarily consist of the healthiest component of dairy, the fat, while lowest in the most problematic component, the casein (beta A1) protein.
Yogurt–organic and unsweetened, of course, and full-fat (if you can find it, or make it yourself from organic full-fat milk). Likewise, unsweetened kefir works great, also. Yogurts and kefirs can also be made from coconut milk (canned); I included the basics of how to make them in the Wheat Belly Total Health book, but the process simply requires the same setup and cultures as you would use for dairy yogurt/kefir, though the fermentation process takes a bit longer.

I experimented with melting some butter, then adding some cinnamon, and then some wheat free market sweetener- it was pretty good!
I was wondering about the use of oat fiber in pancakes. I’ve been noticing a lot of low carb recipes using it lately. I know it is all fiber and adds no carbs, however since it does come from oats, I suppose it’s off limits for grain-free wheat belly purposes?

Not recommended.
As you already know, the net carbs are nil, and this might even make an adequate prebiotic fiber.
The issues are:
▼ gluten cross-contamination
▼ adverse avenin protein
Oats are harvested, transported, stored and processed using the same equipment used for wheat. The oat hulls pick up most of that, so any gluten cross-contam is very likely exacerbated in oat fiber. This risk can be minimized by seeking oat fiber with a credible Gluten Free claim. That might be hard to find (compared to GF oats, oat flour and oat bran). I found no GF oat fiber on Amazon, looking just now.
Oat fiber reportedly contains less than 1% protein, so it might not present much of an avenin hazard, but a clear answer on that requires further research.

I cook fresh blueberries in a bit of water n cinnamon, no added sweeteners but you can use the ones recommended by Dr Davis, once they cook down I mash them til they resemble a jam, I do the same with apples. Amazing how good food taste without added sugar:)
I mix 50/50 organic applebutter with sourcream for a topping.
I make a freezer jam with fresh berries and chia seeds!
Put maple extract in the pancakes and then some in ur melted butter or yogurt. Sweeten either with stevia glycerite, just a little sweet. Maple flavor, yay
Dont have pancakes much becuz the non-flour ones just arent a pancake lol Rather just wistfully recall real pancakes and biscuits. And eat eggs, smoothies and leftover dinners instead.

Xylitol-based, but it does contain xantham gum, and natural caramel color (source unspecified).
We normally order directly from NH, as many web resellers jack their prices up for some reason. You can find it in some markets (like Natural Grocer).
If you do order from NH, be sure to look for a tracking email with a day or two of the order. They recently had an IT problem where orders were being charged and then falling out of the system prior to shipment. A phone call fixed it pretty quickly.
I really miss Natural Grocer. Despite the highly competitive market in the Phoenix AZ area, there is nothing quite as good.
