Celiac disease is, of course, an inflammatory autoimmune condition of the small intestine responsible triggered by consumption of any food containing the gliadin protein such as wheat, rye, and barley. Antibodies against the transglutaminase enzyme in intestinal cells is responsible, as well as antibodies against the gliadin protein. An autoimmune response against the gliadin protein has also been implicated in dermatitis herpetiformis, a skin rash due to the gliadin protein, cerebellar ataxia (anti-gliadin antibodies against proteins in the brain’s cerebellum), and peripheral neuropathy. Long-term, celiac disease increases the likelihood of small intestinal lymphoma and is associated with increased mortality. In short, celiac disease is a real disease.
For many years, however, the awkwardly named non-celiac gluten-sensitivity, NCGS, was regarded as not being a real health condition. People who experienced symptoms such as diarrhea or joint pain with exposure to the gliadin protein but did not show biopsy evidence of celiac disease were not taken seriously. Like irritable bowel syndrome (IBS), NCGS was met with skepticism and regarded as histrionics, an emotional reaction that had no physical basis. That has all changed over the last few years.
NCGS can be experienced as a variety of symptoms that can include IBS-like abdominal discomfort, bloating, and diarrhea; headaches, anxiety, depression, mind “fog”; muscle aches, joint pain (especially in the hands and wrists); chronic fatigue; and skin rashes. (Of course, conventional thinkers also ignore the bowel toxicity of wheat germ agglutinin, the high blood sugars from amylopectin A, the mineral deficiencies from grain phytates, and problems that result from the other components of wheat and grains.)
People experiencing NCGS have been found to show abnormal levels of several inflammatory biomarkers, i.e., objective measures that demonstrate that a genuine abnormal physiological response is triggered by gliadin consumption. People with NCGS:
- Test positive for antibodies against the gliadin protein
- Show increased zonulin blood levels, a marker for intestinal injury and increased intestinal permeability
- Show increased inflammatory markers in the bloodstream
- Have increased blood levels of endotoxemia, i.e., breakdown products of intestinal microbes.
- Have greater risk for autoimmune diseases, especially Hashimoto’s thyroiditis
In short, NCGS is a real health condition, a genuinely abnormal response to the gliadin protein that results in inflammation, increased intestinal permeability, and endotoxemia. Endotoxemia, i.e., the entry of bacterial breakdown products into the bloodstream, worsens insulin resistance and thereby risk for weight gain, type 2 diabetes, hypertension, heart disease, skin rashes, joint and muscle inflammation, and many other conditions. NCGS is therefore not just about bowel intolerance; it is about overall health potentially involving every organ from head to toe. Estimates vary on how many people experience this condition, though it is likely >20% of the population. Such estimates also ignore the fact that other non-gliadin factors mentioned above are also responsible for their own set of health effects.
Someone who makes health-related videos on YouTube says that if you freeze your bread, it then turns into resistance starch. Do you agree with this?

Even if it were true, it’s moot, because the prebiotic fiber in grain-breads does nil to counter all the other hazards. Get your prebiotic/soluble/resistant fiber from safe sources.
And the re-polymerize hypothesis is likely not true to any material degree. The same claim is made for re-cooling cooked rice, and only a few percent of the starches re-polymerize. But I’ve not seen the claim made for grain-based breads. If there’s a cite to any science on it, I’d be happy to study it.
This experiment can actually be run at home, checking blood sugar response to equal amounts of fresh and frozen/thawed bread. Take a baseline fasting reading. Weigh and consume a portion of one. Check BG response every 30 minutes for a couple of hours. Repeat at same time next day with the other challenge agent. But I don’t recommend grain-based bread exposure for any reason.

What’s your opinion of Olipop? One 12 ounce can is supposed to have 9 grams of prebiotic fiber from a blend of chicory root, Jerusalem artichoke, kudzu root, cassava fiber, cassava syrup, marshmallow root, slippery elm bark, nopal cactus, and calendula flower.

New to me. It doesn’t look like a product I’d have any interest in.
Bottom line: the net carbs (about 7g per can), in my view, cancel out any benefits of the prebiotics.
There is no health benefit to carbonation, and the added Tartaric Acid in some flavors might make it even less a friend to your teeth. I have a home carbonator, used only to make Mg-water, and served the day before to off-gas the CO₂.
The Cassava Root Syrup and the various fruit concentrates are very high carb, and strike me as stealth sweetening — and it’s not because they are unaware of safe sweeteners — I see stevia and allulose in some flavors.
